|In my guest for lower carb recipes, I have a great new find! I have started using the low carb, high fiber, 0 trans fat, no partially hydrogenated oils, Tortillas for my pizza crust.I make my own pizza sauce and add what ever fresh ingredients I have.
1 box Pomi strained tomatoes (no preservatives, low sodium)
Garlic or in a pinch, garlic powder
Basil fresh if i have it
Oregano, again fresh if I can
A splash of Balsamic Vinegar
Salt to taste
I usually add some type of red pepper (if you like spicy)
Put this in a pot, cook until somewhat thickened. Slice your toppings while this cooks. The last pizza I made had:
Red bell peppers
Fresh grated Mozzarella cheese
Lightly bake the tortillas on both sides, add sauce, a bit of cheese, toppings, and the rest of the cheese. Bake on 450 until brown.
Healthy, easy, delicious meal! The kids will like the individual pizzas. And no big glob of dough!
