4 small Cod Filets 3 yellow squash (sliced) Sliced or chopped hot peppers to taste 4 large leaves of basil 4 chopped leaves of basil Small tomato Small amount fresh chopped parsley Chicken broth White wine Melted butter (1/2 stick) 3 cloves garlic (chopped) Lemon pepper seasoning
Place cod filets in parchment paper or tin foil with enough room to completely seal. Place on baking sheet. Lightly salt filets with mineral sea salt. Add squash and peppers. Add chicken broth and wine. Pour melted butter over the top. Add lemon pepper seasoning. Place a small slice of tomato on each filet then place 1 basil leaf on each tomato. Add chopped parsley and basil.
Bake at 450 for 20 - 40 mins.
Serve with thinly sliced sauted cabbage and hot banana peppers with soy sauce.
